The Food Science PhD program focuses on food processing and food safety, with particular emphasis on relationships with food quality and acceptability. Students will research a variety of areas including food microbiology, product development and processing and food safety and quality.

Research is one of the most important aspects of the food and human nutritional sciences department and takes place in our specialized facilities, modern laboratories, and collaborative research centres, where our scientists and students work to advance our five broad research themes:

The Food Science (PhD) is a three-year thesis-based program.

Doctor of Philosophy (Food Science)

Expected duration: 3 years

Tuition and fees:  Tuition fees are charged for terms one and two and terms four and five. A continuing fee is paid for term three, term six and each subsequent term. (Refer to Graduate tuition and fees .)

Coursework:

In addition to the minimum program requirements of the Faculty of Graduate Studies, students must complete a minimum of 6 credit hours of coursework at the 7000 level. Of these 6 credit hours, 3 will consist of FOOD 7130: Food Science Seminar

Thesis projects may include basic, applied or practical research relating to the chemistry, physics and/or microbiology of food raw materials, processes and/or products. Thesis topics are assigned within an area of interest to the student and are pertinent to departmental research objectives.

The following are minimum requirements to be considered for entry into the Food Science PhD program. Meeting these requirements does not guarantee acceptance into the program.

Admission Requirements: To be considered for admission to the Food Science PhD program you must have:

  • A research-based Master of Science degree in the general areas of food or nutritional sciences, with a minimum University of Manitoba equivalent GPA of 3.5 in Master’s coursework.
  • A secured thesis advisor.

Students with a Master of Science in a different scientific discipline will be considered for admission by the Food and Human Nutritional Sciences Graduate Studies Committee (FHNS) on a case-by-case basis.

Students with an honours degree from the University of Manitoba or equivalent may be accepted directly into the PhD program.

In addition to the admission requirements described here, all applicants must meet the minimum  admission and English language proficiency requirements of the Faculty of Graduate Studies .

The Food Science PhD program has three application deadlines per year. Applications must be completed online and include several parts:

  • Two letters of recommendation (must be requested from within the application)
  • Proof of English Language Proficiency if required

Food and Agricultural Sciences, Ph.D.

The Food and Agricultural Sciences Ph.D. Program (FDAS) at the University of Maryland Eastern Shore is an academic program housed in the School of Agricultural and Natural Sciences. It is administered through the Department of Agriculture, Food and Resource Sciences. This program contributes significantly to UMES classification as a Carnegie Doctoral/High Research Activity University.

The mission of the FDAS Doctoral program is to prepare students for successful careers and life-long learning experiences within the food industry, academia and government. Studying for an advanced degree in Food and Agricultural Sciences prepares graduates for employment as food scientists, food chemists, food microbiologists, processing engineers, research scientists, educator, and related positions. The goal of our teaching, research and outreach programs is to enhance the safety, quality and availability of foods. Emphasis is given to commodities of importance within our region, including poultry, seafood, produce, and small farm animals.

The FDAS courses cover a wide range of topics and are designed to give students an overview of basic principles of Food Science leading to discussion of advanced topics and novel technologies relevant to manufacture and distribution of processed foods. This includes the discussion of the composition of foods; reactions of components during the growing, harvesting, storage, transportation and processing phase; processes and technologies employed during the industrial manufacture of food; risks that threaten the wholesomeness of foods and management of those risks; development of new food products; regulatory issues important to the food industry; and more. Food safety research from farm to table is conducted in our program. Activities include the detection of pathogenic microorganisms and the development and evaluation of processes to control/eliminate them. Similarly, spoilage microorganisms that impede the quality of foods are being studied. Animal stress and its relationship to meat quality is being studied, as well as the effect of breeding and feeding practices on meat quality.

The Center for Food and Agricultural Sciences

The building was constructed to house the FDAS program. It features laboratories, offices, processing facilities, classrooms, a library, a computer room and a large Animal Exhibition Hall. Laboratories for Food Microbiology, Food Safety, Food Quality, Food Chemistry, Food Processing, Sensory Evaluation and others provide excellent infrastructure to do research related to the safety and quality of foods. Scholarships

Some scholarships are available to qualified students. Awards are given according to the guidelines for each scholarship.

Program Retention and Graduate Committee Role  

The program requires completion of a dissertation as partial fulfillment for the doctoral degree.  Each student is initially assigned a major advisor who is responsible for advising the student on all aspects of the student’s progress throughout the program. The major advisor must be a Regular member of the University of Maryland Eastern Shore Graduate Faculty.

The student must have a major professor (Regular Graduate Faculty Status) and select a Graduate Committee no later than the end of the second semester of enrollment.  Before the end of the second semester of enrollment, each student’s program of study is planned in consort with the major professor (advisor) and the Graduate committee, including any transfer credits to be applied to the degree program.  The Graduate committee must have five members, three of whom must hold UMES Regular or Associate Graduate Faculty status membership, and a majority of the Committee must be UMES full-time faculty in academic departments. The major professor chairs the committee. Annual student progress reviews will be conducted by the committee to ensure satisfactory progress of students toward degree completion. All students must maintain a cumulative 3.0 GPA, pass a written and an oral comprehensive examination and complete degree requirements, including dissertation within seven years of initial enrollment if full-time, otherwise nine years if part-time.

PhD Scholarships in Food Microbiology at Wageningen University and Research, Netherlands

Applications are invited for  Fully Funded  PhD Scholarships in Food Microbiology at The Laboratory of Food Microbiology, Wageningen University and Research, Netherlands.

PhD Scholarships in Food Microbiology project, funded by the EU, aims to enhance the identification and assessment of microbiological safety risks along the European infant food chain. The subproject will develop decision support systems for hazard identification and risk ranking. For that, databases will be built for potential microbiological hazards and risk estimates using epidemiological data, scientific literature and genomic data, and selection procedures will be developed for hazard identification and risk ranking. This subproject is linked to other subprojects within the same program that is developing decision support systems for chemical hazards and the subprojects will closely collaborate.

Successful applicant will receive the following benefits:

  • Gross salary per month € 2.395,- in the first year rising up to € 3.061,- per month in the fourth year

We know costs are an important factor in any decision to invest in a college education. We want to help you to make an informed choice.

Penn State Tuition

Below are the most recent tuition rates with room and board estimates for an academic year (fall and spring semesters). These costs are set by the Board of Trustees each year in July. We encourage students and families to budget for additional cost including travel, personal expenses, books, and supplies. Penn State's tuition rates vary by campus, program, student level, and residency.

Residency Information

Since Penn State is a state-affiliated institution, tuition rates are different for in-state and out-of-state students. Learn more about the policy and the process if you have to appeal residency.

Generally speaking, a student needs to live in Pennsylvania for non-academic reasons for a year prior to enrollment to be considered a resident for tuition purposes. More details on Penn State’s residency policy and residency FAQs can be found on the Office of the Bursar website .

When students apply to Penn State, most times residency is set automatically based on the location of a student’s high school. If this is the case when you apply, and your high school no longer reflects your state of residency, or you believe you have been incorrectly classified as an out-of-state student, you will need to submit a residency appeal . Details about this process are available on the Office of the Bursar website.

For residency appeals prior to enrollment, please send the following documentation to the Undergraduate Admissions Office by mail or fax. Be sure to include your full name and Penn State ID or MyPennState user ID with your appeal. Appeals should include a written explanation, as well as the following items:

Residency Information for Active Military Personnel or Dependents

Veterans using any chapter of the GI Bill®, and dependents receiving Chapter 33, Chapter 35 or Fry Scholarship benefits will be eligible for in-state tuition regardless of residency. If you are a veteran and you are not using GI bill® benefits, please contact your campus Certifying Official to determine requirements to establish eligibility for the in-state rate. All active duty military and DOD employees (their spouse and dependent children) are eligible for consideration to receive in-state tuition provided they are assigned to an active duty station in Pennsylvania and reside in Pennsylvania. Active duty military and DOD employees (their spouse and dependent children) enrolled in Penn State's World Campus will receive in-state tuition.

Scholarships and Awards

Scholarships and awards are a form of financial aid that does not need to be repaid. Penn State offers several sources for possible scholarships funding. While not a requirement for all scholarships, Penn State recommends that all students who are offered admission submit a Free Application for Federal Student Aid (FAFSA) to maximize their aid options.

T he Office of Student Aid is just one unit that offers scholarships and awards at Penn State. Additionally, scholarships and awards can be offered from academic colleges, campuses, and other administrative units, some of which will require separate applications. In addition to the scholarships and awards outlined on the Office of Student Aid website , Penn State offers the following awards to incoming first-year and transfer students through Undergraduate Admissions:

Penn State Discover Award

The Discover Award is awarded to first-time, first-year domestic students who enroll at a Penn State campus other than Penn State University Park or Penn State World Campus for both the fall and spring semester immediately following their high school graduation. Transfer students who enroll in a degree program that can be completed at a Penn State campus other than Penn State University Park or Penn State World campus are also eligible.

Penn State Provost's Award

The Provost's Award is a four-year award that is available to first-time, first-year students with offers of admission to any of Penn State’s twenty undergraduate campuses, excluding Penn State World Campus. Both Pennsylvania and non-Pennsylvania residents are considered for this award, as well as international students, and it is very competitive. This award is not available for transfer students to Penn State.

Accuracy of diagnostic blood tests for Alzheimer’s disease varies

Head-to-head comparison of 6 tests reveals which ones could replace spinal taps, brain scans

A head-to-head comparison of six commercially available blood tests for Alzheimer’s disease led by researchers at Washington University School of Medicine in St. Louis reveals that two are accurate enough to replace brain scans and spinal taps in some patients with cognitive impairments.

Neurologists diagnose cognitive impairment with a clinical exam of memory and thinking skills. To determine whether Alzheimer’s disease is the cause of the cognitive impairment, evidence of the specific brain changes that characterize Alzheimer’s must be obtained, typically via a brain scan or spinal tap. Identifying people whose cognitive symptoms are due to Alzheimer’s disease is critical now that new Alzheimer’s therapies are available that could change the course of the illness.

To make diagnosis more convenient for patients, many companies have begun selling Alzheimer’s blood tests to consumers, and at least five companies are now offering these tests to doctors for clinical use. Doctors have no way of knowing which tests are most accurate because, until now, the tests have not been evaluated in a head-to-head comparison using the same population, methods and criteria.

Suzanne Schindler, MD, PhD , and her team at Washington University School of Medicine in St. Louis led a data analysis comparing the accuracy of six commercial blood tests, four of which are clinically available, in detecting signs of Alzheimer’s disease, particularly the presence of the characteristic amyloid plaques in the brain. The analysis showed that some of the tests are accurate enough to replace spinal taps and brain scans in many patients with cognitive impairment. The head-to-head comparison was part of a project developed and launched by the Foundation for the National Institutes of Health Biomarkers Consortium, a public-private partnership of which Washington University is a member. The results are being presented today, July 30, in an oral session at the Alzheimer’s Association International Conference in Philadelphia.

“Some of the blood tests are accurate and some are not, and doctors don’t know which tests to use,” said Schindler, an associate professor of neurology at Washington University and the lead author of the study. “With this head-to-head comparison, doctors now have more reliable information about which tests will best help them provide an accurate diagnosis to their patients.”

Confirming that cognitive impairment is due to Alzheimer’s disease – early in the course of the illness – is crucial for ensuring access to the newest generation of Alzheimer’s therapies. In the past two years, the Food and Drug Administration (FDA) has approved two drugs that slow the trajectory of disease, with more in the pipeline. Both FDA-approved drugs target amyloid, so doctors must confirm that a patient has amyloid buildup in the brain before they can prescribe the treatment. In addition, the diagnosis must be confirmed as early in the disease course as possible, because the drugs are only approved for people with very mild to mild symptoms.

The team evaluated the ability of six commercially available blood tests to detect proteins in the blood that correlated with key features of Alzheimer’s disease: amyloid plaques and tangles of the protein tau in the brain, reduced brain volumes and cognitive impairment. The six tests were developed by ALZpath, C2N Diagnostics, Fujirebio Diagnostics, Janssen, Quanterix and Roche Diagnostics. C2N Diagnostics is a Washington University startup, and its Alzheimer’s tests are based on technology licensed to C2N by the university.

Blood samples and participant data were obtained from the Alzheimer’s Disease Neuroimaging Initiative (ADNI), a long-running, multisite collaboration designed to identify Alzheimer’s biomarkers and to advance biomarker development by sharing data and resources within the research community. The study included 392 people who had provided blood samples within six months of undergoing brain scans. The participants had a median age of 78.1 years, and just under half (49%) exhibited cognitive impairment.

Each of the six tests measured the blood levels of one or more biomarkers linked to Alzheimer’s disease. Across the six tests, five distinct biomarkers were measured using various techniques. One biomarker, used in four of the tests, proved exceptionally accurate at identifying signs of Alzheimer’s disease: a form of tau known as phosphorylated tau 217 (p-tau217).

“Some people thought that we might need to measure multiple biomarkers to get at the different features of Alzheimer’s disease,” said Kellen Petersen, PhD , an instructor in neurology at the School of Medicine. Petersen co-led data analysis for the study and will give the oral presentation at the international Alzheimer’s conference. “That’s not what we found. P-tau217 alone can do it all. It accurately predicted levels of amyloid and tau in the brain, brain volumes and cognitive symptoms. It was more accurate than any other biomarker, or even any combination of biomarkers, across the board.”

The four tests that incorporate measures of p-tau217 all performed well, regardless of the approach they took to measuring the protein. The top two performers across all measures were C2N Diagnostics’ PrecivityAD2 and Fujirebio’s Lumipulse.

In June, the Global CEO Initiative on Alzheimer’s Disease published a paper in Nature Reviews Neurology laying out a framework for using blood tests in Alzheimer’s clinical care and recommending minimum criteria for acceptable performance. Schindler is the lead author on that paper.

“We concluded that, to be used without a second test, blood tests need to be as accurate as FDA-approved cerebrospinal fluid tests, which are approximately 90% sensitive and specific at identifying Alzheimer’s disease in cognitive impaired individuals,” Schindler said. “In this current study, the p-tau217 tests met that standard, but the others did not.”

The data and algorithms used in this study are available via ADNI to investigators interested in further studying the performance of these tests.
